Kahalu’u Country Store has found a winner in 2018, and it’s their brand of Raw Kiawe Honey “from bees working in ‘Ewa Beach” – specifically White Plains Beach in ‘Ewa Beach, O’ahu – an area noted for its abundance of kiawe shrubs and trees, desert-like conditions and adjacent, breezy, white sandy beaches.
Each batch of KCS’s honey is quality-controlled through tests of moisture content, raw processing (< 40°C), wide sieve straining, and hygienic kitchen practices. This KCS release of Raw Kiawe Honey was harvested in early August 2018. While honey can be kept indefinitely so long as the moisture content remains below 18%, enzymatic freshness is assured through August 2021.
